Shrimp Puffs

List of Ingredients
2 slices of whhite bread, crusts removed and torn into small bits
1 egg lightly beaten
1/3 cup mayonnaise
8-oz baby shrimp chopped*
1/4 cup each, red pepper and onion
1 tsp dijon mustard
1/4 tsp fresh ground pepper (I have also used a pinch of red) or sometimes Old Bay seasoningRecipe
Oven set at 375ºF. Combine the bread, egg and mayonnaise and mix well. Add all remaining ingredients and blend well. Chill or if using immediately shape into small balls (use a Tbs as a measure). Arrange on a baking sheet and bake till browned and puffed about 25 minutes. Check after 20 mins. ~ Serves 4
Posted by: Appy_Girl (yep they really puff up): This is a T&T recipe and it is very easy to make ~ I make up the mixture early in the day and then shape them into small balls when ready to "Bake" not Deep Fry ~ *I also like to use Fresh Shrimp instead of the canned. I usually use 5-6 medium, cooked and cleaned for the full recipe ~ I hope this one will appeal to a few and that you find them as tasty as we do ~ Janie ~
