Bite-size Chocolate Almond Brownies

1 3/4 cup + 2 tablespoons Almond paste
5 Eggs
9 tablespoon Butter, melted
Scant 1/2 cup or 7 tablespoons Cocoa powder
Recipe
Use a stand mixer with paddle to mix the almond paste. Gradually add the eggs. It is important to add the eggs one at a time. Add the cocoa powder. Then, warm the melted butter and add it to the mixture until completely combined. Butter and flour mini muffin tins. If you prefer, you can use paper liners for the muffin tin. Fill each cavity 1/8-inch from the top. Bake at 350F for 8 minutes. DO NOT OVERBAKE or the brownies will be too dry.
Footsie Notes: Because there is no added sugar, only what is in the almond paste, the brownies are not your typical sweet tasting brownies. Unfortunately, this makes them entirely too irresistable! They're gone in a flash!

Solo Almond Paste comes in an 8 oz. can.
Odense Almond Paste comes in a 7 oz. tube in a box.
I now buy a 7 pound can direct from Blue Diamond Almonds, my sister buys a 7 pound can from OLindo's. It's freezeable.
As for this recipe, I measured one cup and weighed it.
1 cup almond paste weighs 9 7/8 ounces or 282 grams. So figure 2 cans.
In the past, when I was buying Solo brand (it gave me an extra ounce at less cost than Odense) if a recipe called for 1 cup almond paste, I just used 1 can (the neopolitan/rainbow cookies are a good example) and the recipes always came out fine. For my sister's italian macaroon cookies, I had to use 3 cans of Solo.
