Blueberry Cream Muffins

These were very moist and tastes a bit like pound cake.
List of Ingredients
4 eggs
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 cups (16 ounces) sour cream
2 cups fresh blueberries (frozen works, too)
Recipe
In a mixing bowl, beat eggs. Gradually add sugar. While beating, slowly pour in oil; add vanilla. Combine dry ingredients; add alternately with the sour cream to the egg mixture. Gently fold in blueberries. Spoon into greased muffin tins. Bake at 400°F for 20 minutes. Yield: 24 muffins.

Janra posted: I have been making these for years, they are wonderful. I add grated orange or lemon rind to the mixture and it brings it up another level. I make mine a little different, I add all the dry ingredients in a bowl and mix with whisk. I add all the wet ingredients and mix them with a whisk, then pour the wet into the dry and only mix with fork until they are lightly blended and then fold in berries, I was taught you never over mix muffin batter. I use different fruit and berries in these muffins too.
