    REFRIGERATOR OATMEAL MUFFINS

    2 cups boiling water
    2 cups natural bran
    5 cups flour
    5 tsp baking soda
    1 tsp salt
    1 cup shortening
    3 cups white sugar
    4 eggs
    1 litre buttermilk
    4 cups rolled oats
    2 cups raisins


    Recipe



    Pour boiling water over bran, let stand. Stir flour, baking soda and salt together in a large bowl. Set aside. Cream shortening and sugar, add eggs and buttermilk. Mix well. Add to flour mixture, stir well. Stir in oats, raisins and bran. Fills an ice cream bucket exactly.

    Bake at 375ºF for about 20 minutes.

    Keeps in the fridge about 2 months (if it lasts that long). These are excellent, way better than bran muffins.
