    Star's Creamy Filled Peanut Butter Muffins

    1 1/2 cups all purpose flour
    1 1/2 tsp baking powder
    1/2 tsp salt
    1/2 cup brown sugar
    1/2 cup peanut butter chips
    1/4 cup oil
    1/2 cup peanut butter, smooth or crunchy
    2 eggs
    1 cup milk
    2 tsp vanilla
    Opt: 1/2 cup chopped peanuts

    Filling:
    1/4 to1/2 cup peanut butter
    1/4 to 1/2 cup powdered sugar

    Coarse sugar for topping if desired

    Grease 12 cup muffin tin well with Crisco. Preheat oven to 350ºF.

    Mix filling ingredients together well in small bowl. Set aside. In large mixing bowl, mix flour, baking powder, salt and brown sugar, stirring until well combined. In another medium sized mixing bowl, mix peanut butter chips, oil, peanut butter, eggs, milk and vanilla. Mix well. Add chopped peanuts if desired. Add liquid ingredients to dry ingredients and just until combined (muffins will be tough if overmixed)

    Fill each muffin tin about 1/3 of the way up. Put one to two tsp of filling on top of batter. Top each muffin with more batter until all or most is used. Sprinkle tops with coarse sugar granules if desired.

    Bake for 25 minutes or so or until tops spring back when touched.

    12 muffins.

    Tips: The filling ingredients are very stiff and sticky. I pinch off pieces of it and roll into balls, then flatten it a little with my fingers. Then I place it in the center of the 1/3 of muffin batter carefully so that it doesn't touch the sides of the pan. Then spoon the rest of the batter over and around it. It helps if you have some paper towels beside you to wipe your fingers off after every few pinches. Posted by: starshineeliz
