Sweet Potato Muffins #2

List of Ingredients
1 3/4 c. flour
1 tsp. salt
3 tsp. baking powder
1 Tbs. packed light brown sugar
1/2 c. chopped walnuts
2 eggs, well beaten
3/4 c. milk
1 1/4 c. mashed cooked sweet potatoes
Topping:
1/4 c. butter, melted
1/4 c. sugar
1/2 tsp. cinnamon
Recipe
Grease muffin pan and set aside. In med. bowl, sift together flour with the salt and baking powder. Add brown sugar and chopped walnuts, and mix thoroughly. In separate bowl, combine eggs, milk, sweet potatoes, and butter. Add liquid mixture to dry ingredients and mix til flour is moistened. Pour batter into muffin cups, filling each 2/3 full.
Bake at 425º for 25 mins.
In a small bowl, combine 1/4 c. sugar with 1/2 tsp. cinnamon. Before serving and while still warm, sprinkle this mixture over top of each muffin.
Makes 18.
Note: You can use canned in the recipe but what I did when I use canned, cut back on the milk just a couple teaspoons for the added moisture from the canned taters.
