Cherry-Nut Loaf

1/2 cup CRISCO all-vegetable shortening or 1/2 CRISCO Stick
3/4 cup sugar
2 eggs
1 teaspoon vanilla
2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup chopped pecans
1 jar (10 ounces) maraschino cherries, drained and chopped (1 cup)
Confectioners Icing
1 tablespoon milk
1/2 cup confectioners' sugar
1/4 teaspoon vanilla Recipe
Preheat oven to 350ºF. In bowl, cream Crisco and sugar till light. Beat in eggs and vanilla. Combine flour, soda, and salt; add alternately with buttermilk to creamed mixture, mixing well. Fold in nuts and cherries. Turn into a greased 9 x 5 x 3-inch loaf pan. Bake at 350ºF for 55 to 60 minutes. Cool in pan 10 minutes. Remove from pan. Cool thoroughly. If desired, glaze with Confectioners Icing.
Confectioners Icing
Add enough milk (about 1 tablespoon) to 1/2 cup confectioners sugar (sift if lumpy) till desired consistency. Add 1/4 teaspoon vanilla. Stir to blend well.
