    2 eggs, lightly beaten
    1 1/2 cups firmly packed brown sugar
    1 teaspoon ground cinnamon
    3 1/4 cups bread flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    2 cups buttermilk
    1 cup chopped pecans

    Recipe



    Preheat oven to 325°F. Spray 2 8x4-inch loaf pans with non-stick vegetable spray.

    In a large mixing bowl, combine eggs, sugar, and cinnamon; beat until well blended. In a medium bowl, combine flour, baking powder, and salt; add alternately with buttermilk to egg mixture, blending well after each addition. Stir in pecans. Pour into prepared loaf pans.

    Bake for 1 hour or until loaves are golden brown and a tester inserted in the center of the loaves comes out clean. Cool in pans for 10 minutes. Remove from pans; cool completely on a wire rack.

    (Yield: 2 loaves)
