List of Ingredients
4 medium potatoes, peeled optional, cut into 3/4" cubes
1/4 c chopped onion
1/4 c butter
1 lb canned ham, cut into 1/2" cubes
8 eggs
1/2 t salt
1/4 c to 1/2 c sharp cheddar cheese, shredded
Recipe
Saute the potatoes and onions in butter until lightly brown. Cover and cook 15 to 20 minutes or until the potatoes are tender. Stir in the ham.
Beat the eggs with the salt. Pour over the potato mixture. Cook over low heat. Raise eggs with spatula so uncooked eggs flow to the bottom of pan.
When eggs are set sprinkle with the cheese. Cover pan until the cheese is melted.
Serves 3 or 4 hungry people.
