Light-as-a-feather Hot Cakes

In a 4 c. measuring cup combine:
1 c. milk, 1 egg, 2 T. vegetable oil or melted butter
Mix dry ingredients together and add to the wet ingredients.
1 c. flour
1/2 t. salt
2 T. sugar
2 T. baking powderRecipe
Stir only enough to ALMOST mix the ingredients. Stirring pancake batter too much over develops the gluten in the flour and makes the pancakes tough.
(Note: if batter is too thick, add a little more milk.)
