1/2 c all-purpose flour
1/4 c whole wheat flour
1/2 tsp. baking powder
1/4 tsp salt
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/2 C firmly packed brown sugar
Egg substitute equivalent to one egg
3 TBS. acceptable vegetable oil (avoid coconut, palm kernel, and palm oil)
1 1/4 c quick-cooking or regular oats
1/2 C wheat germRecipe
Preheat oven to 350ºF.
In a small bowl, stir together flours, baking soda, salt, cinnamon and nutmeg. Set aside.
In a large bowl, combine brown sugar, egg substitue, and vegetable oil. Stir well until combined. Stir in flour mixture oats and wheat germ.
Drop dough by tablespoons about one inch apart on a baking sheet. Flatten slightly to a two-inch diameter with your hand or the bottom of a glass.
Bake for 10 minutes or until light brown. Cool on wire racks. Store cooled cookies in an airtight container for up to one week or in the freezer for several weeks.
