Apple Cake With Cinnamon Sauce

List of Ingredients




1 1/2 C oil
2 C sugar
4 Eggs
2 1/2 C flour
2 t baking powder
1 t cinnamon
3 C red delicious, gala, or jonathon apples, peeled and chopped
1 t vanilla

Recipe



Mix together oil and sugar. Beat in eggs one at a time. In a separate bowl, combine the flour, baking powder and cinnamon; stir into egg mixture. Fold in apples and vanilla, mix thoroughly. Pour into a greased 8 inch square dish. Bake for 30 minutes at 350. Cool and remove from pan. Serve with Cinnamon Sauce. recipe follows

Cinnamon Sauce
2 C boiling water
2 C packed brown sugar
1/4 C butter
1/4 C flour
2 t vanilla
1 1/2 t cinnamon
1 t salt

Combine all ingredients in a sauce pan and bring to a boil, stirring constantly. Serve warm over slices of the cake.
