    Cake:
    3 eggs
    1/2 cup vegetable oil
    1/2 cup applesauce
    2 cups flour
    2 cups sugar
    1 t. baking soda
    1 t. vanilla extract
    2 t. cinnamon
    1/2 t. salt
    4 cups chopped apples

    Caramel Sauce:
    1/2 cup butter, 1 stick
    1/2 cup sugar
    1/2 cup packed brown sugar
    1 T. flour
    1/2 cup cream
    1 t. vanilla extract

    To make the cake, mix the eggs, vegetable oil and applesauce in a mixing bowl and beat lightly. Add flour, sugar, baking soda, vanilla, cinnamon and salt and mix well. Fold in the apples. Spoon into a greased 9 x 13 inch cake pan.

    Bake at 350ºF for 45 to 60 minutes or until cake tests done.

    To make the sauce, melt butter in pan. Add sugar, brown sugar, flour, cream and vanilla and mix well. Bring to a boil over medium heat and cook for 2 minutes. Serve warm over cake. You make prepare the caramel sauce in advance and reheat to serve.
