Butterscotch Cake & Icing

1 Duncan Hines yellow cake mix
1 box (4 serving size) instant butterscotch pudding mix
3 eggs
1-1/2 cups water
1/3 cup oil
Icing:
1 large container cool whip (I used dream whip) *see note
8 ozs. cream cheese, softened
1 cup brown sugar
Recipe
Mix all ingredients together.Pour into lightly greased
and floured 9x13 pan. (I used parchment paper.) Bake in 350ºF oven 30-35 min. or until done.
Icing: Put brown sugar in large mixing bowl; add softened cream cheese. Mix together with electric mixer until creamy. Mix in the entire container of cool whip, using mixer to blend together. Make sure cake is cooled before frosting.
*NOTE: I used 1-1/2 pkgs. of dream whip instead of cool whip. I put mine in a long loaf pan, split it in half with dental floss, put some icing on bottom and then placed top on it. Then put icing all over cake. It is delicious.

Review posted by: starshineeliz - I have never tried a recipe that Tabbie posted that didn't turn out wonderful. This cake is super easy, and super delicious. I think next time we may try putting some butterscotch chips in the batter, and maybe some heath chips in the frosting....but it's good as written. Have to confess, I didn't make it, Sydney did, and she loved it too! Do keep in in the refrigerator..the icing is made from Cool Whip and gets too runny if left out long. Thanks Tabbie!!!
