    2 1/2 cups sugar
    1 1/2 cups butter (3 sticks), room temperature
    8 large eggs, room temperature
    1 tsp vanilla
    1 tsp lemon flavoring
    2 1/2 cups flour
    1/4 tsp baking powder
    1/8 tsp salt
    1 tsp cream of tartar

    Preheat oven to 325 degrees. Grease and flour a 10-inch tube pan.

    Combine the dry ingredients and set aside. Cream the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each one. Add the flavorings and beat. Gradually add the dry ingredients until well incorporated.

    Pour batter into the pan and bake for about 1 1/2 hours. Check cake after about 70 minutes since ovens vary.

    Cream Cheese Frosting:
    4 oz cream cheese, softened (room temperature)
    2 cups Confectioner’s sugar
    1 tsp vanilla
    1/2 tsp lemon flavoring (to your taste)

    Cream the cream cheese; add the Confectioner’s sugar and flavorings. Add just enough of the 2nd cup of Confectioner’s sugar until you get the consistency of frosting. Put the frosting into a cup and heat in the microwave for 20-30 seconds. Spread a thin layer of the warm frosting over the entire cake. This will look like a shiny glaze. Refrigerate just until the frosting sets.

    Serve with strawberries (raspberries, peaches) and a dollop of whipping cream.
