This is really good. I've made this several times and each time, I am asked for the recipe. It's easy.

List of Ingredients

1 can (16 ozs.) pumpkin
2 cups sugar
1 cup vegetable oil
4 eggs, lightly beaten
2 cups all purpose flour
2 tsps. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt

FROSTING:
1 pkg. (3 ozs.) cream cheese, softened
5 Tbls. butter or margarine, softened
1 tsp. vanilla extract
1-3/4 cups confectioners' sugar
3-4 tsps. milk
Chopped nuts


Recipe

In a mixing bowl, beat pumpkin, sugar & oil. Add eggs; mix well. Combine flour, baking soda, cinnamon & salt; add to pumpkin mixture and beat until well blended. Pour into a greased 15x10x1 inch baking pan.

Bake at 350ºF for 25-30 minutes or until cake tests done. Cool. Then mix frosting ingredients and spread on cooled cake.
