    St. Patty's Day Cupcakes

    Recipe Introduction

    The color and chocolate chips make these a wonderful treat, and you won't need a mixer for these super-quick treats either!

    List of Ingredients

    1 3/4 cup flour
    1 4-serving size package instant pistachio pudding mix
    3/4 cup mini chocolate chips
    2/3 cup sugar
    2 1/2 tsp. baking powder
    1/2 tsp. salt
    2 beaten eggs
    1 1/4 cups milk
    1/2 cup oil
    1 tsp. vanilla or 1/4 tsp. almond extract
    1/2 can (1 cup) cream cheese frosting
    green colored sugar
    1/2 cup candy-coated milk chocolate pieces

    Recipe

    In a large bowl, stir together flour, pudding mix, chocolate pieces, sugar, baking powder, and salt.

    In a small bowl, combine the eggs, milk, oil, and vanilla or almond. Stir into flour mixture just until combined.

    Fill greased or paper-line muffin tins about 2/3 full.

    Bake at 375º for 18 to 20 minutes or till golden brown.

    Cool on a wire rack.

    Frost and sprinkle with green sugar and/or other candy pieces, such as green M&Ms.

    Makes 18 cupcakes. YuMMy!!
