Cake:
1 box white cake mix
3/4 cup vegetable oil
3/4 cup boiling water
3 ounce box lemon gelatin
4 eggs
2 teaspoons almond extract
Pineapple Filling:
2 sticks butter or margarine
1 cup sugar
1 large can crushed pineapple, thoroughly drained
1 small jar Maraschino cherries, thoroughly drained & chopped
1 cup sliced almonds
1 teaspoon vanilla
Recipe
Cake: Combine cake mix and oil. Mix water with gelatin until dissolved. Cool to lukewarm. Add to cake mixture. Add eggs and almond extract. Beat 3 minutes on medium speed. Pour into 3 Pam-sprayed or greased and floured cake pans. Bake at 325° until the top springs back when lightly touched with your finger tips, about 25 minutes. Do not overbake. Cool in the pans for 10 minutes then turn out on racks to cool completely.
Filling: Cream butter and sugar well. Stir in other ingredients. If too stiff, add a little pineapple juice to make of spreading consistency. Spread between layers and over top and sides of cake.
