Bailey's Irish Cream Truffles

12 oz. semisweet chocolate chips
1/4 c. heavy cream
1 Tbsp. sweet butter
2 egg yolks
1/4 c. Bailey's Irish Cream
Confectioner's sugar, chopped nuts, sprinkles, cocoa
Recipe
Melt chocolate, Bailey's and heavy cream over very low heat or double boiler. Whisk in egg yolks, one at a time; mixture will thicken. Whisk in butter.
Refrigerate overnight or until firm.
With spoon, make small balls. Roll in your choice of powdered sugar, cocoa, chopped nuts, sprinkles, etc.
