    Maddymoo's Favorite Pralines

    1 cup brown sugar
    1 cup granulated sugar
    1/2 c. whipping cream
    1 tsp. Vanilla
    2 c. pecans
    2 Tblsp. Butter

    Recipe



    Combine all ingredients and cook till a candy thermometer reaches 238ºF.

    Drop by tesapoons on waxed paper very quickly because they will set fast.

    Review posted by: starshineeliz: You guys know I don't like candy thermometers...which is why I'm limited in my candy making ability...LOL..but in order to try to put this praline cake together, I was gonna have to make pralines..so I chose Maddy's recipe, since it looked fairly simple and something even this thermometer challenged cook could do...

    They are delicious and not at all hard. Everything worked just as she said. The only drawback, and she mentioned this, is that they set up very fast...you've got to have your brain together in order to get them onto the waxed paper before they get too thick to work with. I made big pralines (about 3 inches across) and got about 12 out of the recipe. I wasn't sure I'd have time to make them smaller, but it didn't matter since I'm crumbling them later for this cake anyway.

    Also, you've gotta realllly scrub that pan (sort of like when you make toffee) after you're done, so don't let it sit long, or you'll have a tough job.
