    1 lb. icing sugar (powdered)
    3 Tbs. butter or margarine, softened
    2 or 3 tsp. peppermint extract
    1/2 tsp. vanilla extract
    1/4 cup evaporated milk
    2 cups semisweet chocolate chips
    2 Tbs. solid shortening

    Recipe



    In a bowl, combine first four ingredients. Add milk and mix well. Roll into 1 in. balls and place on waxed paper-lined cookie sheet. Chill for 20 mins. Flatten with a glass to 1/4"; chill overnight. (I put them in the freezer. Just take out a few at a time to keep them really hard.)

    Melt chocolate chips and shortening. Dip patties; place on waxed paper to harden.

    Makes about 4-5 dozen.


    Notes: If you are serious about making the peppermint patties you should buy a size 100 scoop. It is just the right size and makes the work so much easier. I triple the recipe and use 1 bottle of peppermint extract. I also dip a glass in confectioners’ sugar to flatten the patties.
