Crab Au Gratin

2 T. plus 1 t. butter, divided
3 T. flour
1/2 t. salt
1/8 t. paprika
1/2 c. half and half
1/2 c. milk
1/4 c. white wine or chicken broth
1 can (6 oz) crab meat, drained and flaked, cartilage removed, OR 2/3 c. imitation crab meat
1 can (4 oz) mushroom stems and pieces, drained
1 1/2 t. snipped chives
1/2 c. shredded Cheddar cheese
1 T. dry breadcrumbs

In a saucepan melt 2 T. butter, stir in flour, salt and paprika until smooth. Gradually add half and half, milk, wine (or broth). Bring to a boil. Cook and stir 1-2 minutes or until thickened. Stir in crab, mushrooms, and chives. Heat through. Stir in cheese, heat until melted. Transfer to a greased shallow 1 qt baking dish. Melt remaining butter and toss with breadcrumbs. Sprinkle over crab mixture.
Bake uncovered at 400ºF for 10-15 minutes or until bubbly. Let stand 5 minutes. Serve with crackers.

* I used minced dried onion in place of chives, also I used a little more cheese. Enjoy! Tammy
