    Shrimp and Eggplant Casserole

    1 cup chopped onions
    1 cup chopped green bell peppers
    1 cup chopped celery
    4 cups peeled, diced eggplant (about 1 pound)
    2 cloves garlic, crushed
    2 tablespoons butter or margarine
    1 pound shrimp, shelled, deveined and sliced in half lengthwise
    2 cups cooked rice
    1 tablespoon Worcestershire sauce
    2 teaspoons salt
    1/2 teaspoon black pepper
    1/2 teaspoon thyme
    3/4 cup mayonnaise
    1 cup buttered soft bread crumbs

    In large skillet, cook onions, bell pepper, celery, eggplant and garlic in butter until vegetables are crisp-tender.

    Stir in remaining ingredients except bread crumbs; turn mixture into lightly buttered shallow 2-quart casserole and top with bread crumbs.

    Bake in preheated 350º F. oven 45 minutes.

    Serves 6.
