    Ham Stuffed Manicotti

    8 Manicotti Shells
    1/2 c. Chopped onion
    1 T vegetable oil
    3 C.(1 lb) ground fully cooked ham (you can use food processor to chop very fine as if you were making ham salad)
    1 can (4 oz) slice mushrooms (fresh can be substituted)
    1 C. shredded Swiss cheese, divided
    3 T grated parmesan cheese
    1/4 - 1/2 c. chopped green pepper
    3 T butter or margarine
    3 T flour
    2 C. milk
    Paprika
    Chopped Fresh parsley

    Recipe



    Cook Manicotti and set aside.

    In large skillet, sauté onion in oil until tender. Remove from heat; add ham, mushrooms, half of the cheeses, set aside.

    In a saucepan sauté green pepper in butter until tender. Stir in flour until combined. Slowly add milk; cook, stirring often until thickened and bubbly. Mix quarter of the sauce into ham mixture.

    Stuff shells with approx. 1/3 cup of filling. Place into greased 11 x 7 dish. Top with remaining sauce; sprinkle with paprika.

    Cover & bake at 350ºF for 30 minutes or until heated through. Sprinkle with parsley and remaining cheese before serving. Serves 8.

    Posters note: Recipe can be easily doubled or cut in half (I often make it for just my husband and myself). You can also forgo the manicotti and use lasagna noodles, just make layers instead. Hope you enjoy!
