    SWISS POTATO SQUARES

    Recipe Introduction

    I won $500 from Country Woman magazine for this ham-potato recipe. Thought I would share it with you. Perhaps you will enjoy it also!

    List of Ingredients

    8 to 10 med. boiled potatoes
    6 T. melted margarine
    2 tsp. salt
    1/4 tsp. black pepper
    1 tsp. chopped parsley
    1 1/2 c. diced Swiss cheese
    1 med. grated onion
    1 tsp. garlic powder
    3 eggs
    1/2 c. milk
    1 c. diced cooked ham

    Recipe

    Peel and cook potatoes. Mash until smooth. Stir in melted margarine, salt, pepper & parsley. Spoon about 2/3 of the potato mixture on bottom and sides of 8 x 8" baking dish.

    Combine cheese, ham, onion and garlic powder. Spoon this mixture into potato-lined pan. Beat together eggs & milk and pour over cheese & ham. Spoon remaining potato mixture over the top.

    Sprinkle with paprika and bake in 400° oven for 30 to 35 minutes or until puffed and golden. Cut into squares to serve.
