posted by Pat: This is so easy and is delicious; I tweaked it to suit my taste and make it at least once a year!!
List of Ingredients
4 cups Irish potatoes, sliced; leave a little peel on
1 large sweet onion; sliced
4 cups cabbage; shredded or sliced thinly
1 can corned beef; crumbled ****
1 can cream of celery soup (can sub others)
1/2 stick or 4 Tablsp butter; melted
Recipe
Preheat oven to 350°F. Spray with Pam a round casserole dish. Alternate layers of veggies with the corned beef.
Mix soup and butter and pour over. Cover and bake 45 minutes; uncover and bake 10-15 minutes longer.
This is also good the second day.
**** Sorry but I don't eat like any canned meat! I go to the deli and buy 1/2 to 1 pound corned beef. I cut it into bite sized pieces and use in place of the canned meat.
