    ALMOND BLONDIE BAR COOKIES

    1 C. flour
    1 tsp baking powder
    1/4 tsp salt
    1 box (7 oz) Odense almond paste (be sure the almond paste is cold from the fridge)
    1/2 cup chocolate chips
    1/4 C. chopped almonds
    1 stick real butter (1/2 cup)
    3/4 cup brown sugar (*see note)
    1 large egg
    1/2 tsp vanilla

    Recipe



    Grease an 8x8" baking pan and preheat oven 350ºF.

    Stir flour, baking powder and salt into mixing bowl. Gently grate almond paste on a large hole grater into the flour, stopping every so often to gently disperse the small pieces through the flour. Mix until fine crumbs. Add chocolate chips and almonds, blend briefly.

    Melt butter and while hot, beat sugar in until smooth. When just warm (not hot) beat in egg and vanilla until smooth.

    Stir butter mix into flour mix until just dispersed. Scrape into prepared pan and bake approx 25 min or until toothpick comes out clean

    I got this recipe off the Odense recipe site for almond paste and it is a keeper! As many of you know I am gluten intolerant and when I make a recipe I've never tried before, I have to taste it. I savored my bite and then had to spit it out, but wow, is it delicious! All lovers of almond flavor...you will want to add this to your collection!
