    ALMOND SHORTBREAD

    1 cup (2 sticks) butter, softened
    1 cup granulated sugar
    1 large egg yolk
    1 tsp pure almond extract
    2 cups all purpose flour
    1 cup blanched almonds, finely ground

    Recipe



    Heat oven to 325ºF. Lightly grease 13" X 9" X 2" baking pan.

    In large mixing bowl, cream butter; gradually add sugar, beating until light & fluffy. Add egg yolk; beat well. Stir in almond extract. Gradually add flour & ground almonds, stirring until well blended. Press dough into prepared baking pan.

    Bake in 325ºF oven 40 mins until lightly browned. Cut into 2" squares while warm. Cool in pan 10 mns; remove to wire rack to cool completely.

    Makes about 2 dozen squares.
