    Almond Squares with Icing

    2 eggs
    1 cup sugar
    1 cup cake flour (or 1 cup all-purpose flour minus 2 Tablespoons)
    1/2 cup melted butter
    2 tsp. almond extract
    1 cup sliced almonds, divided


    Recipe

    Preheat oven to 350°F. Butter a 9 inch square pan and set aside.

    Beat eggs thoroughly, but not thick. Beat in sugar. Gently fold in cake flour. Add melted butter and almond extract. Fold in 3/4 cup almonds (reserving 1/4 cup for decorating).

    Bake in a well-buttered pan until done, approximately 30 minutes. Cool and frost with Almond Butter Frosting.

    Almond Butter Frosting: Beat together 2 Tablespoons butter, 1 cup sifted powdered sugar, 1 Tablespoon milk, and 1/2 teaspoon almond extract until creamy. Spread on cooled almond cake. Sprinkle with remaining 1/4 cup sliced almonds. Cut into small squares. These freeze well.
