    1 cup flour
    1/4 tsp salt
    1/4 cup butter (1/2 stick)
    1/2 cup granulated sugar
    1 tsp vanilla
    1 tsp baking powder
    1/4 tsp cinnamon
    1/2 cup brown sugar
    1 Jersey fresh egg
    2/3 cups Jersey Fresh apples, peeled, & chopped (try blueberries in season)
    1/2 cup chopped nuts (omit nuts if using blueberries)
    1/4 cup cinnamon sugar (1/2 tsp cinnamon to 3 TBS sugar)

    Melt butter in saucepan. Remove from heat. Add sugars, egg and vanilla. Mix with a wooden spoon until smooth. Add dry ingredients. Add apples and nuts. Spread in a buttered 8 in. X 8 in. pan. Sprinkle with cinnamon sugar. Bake at 350 degrees for 30 minutes.

    This recipe broke the record for putting together. The only thing to clean up was 1 Pot~` That's it. Cake was very moist and very tasty. The nuts and cinnamon just made this so good. Perfect little treat. Fairly guilt free~`No Butter~~ Thanks Nancy for this spicy little treat~~Janie~`

    Apple Squares (Ingredients)
    1 cup of flour
    1/4 tsp salt
    1/4 cup butter (I used Olivio)
    1/2 cup sugar (used 1/3 cup)
    1 tsp vanilla
    1 tsp baking powder
    1/4 tsp cinnamon
    1/2 cup brown sugar (used 1/3 cup)
    1 egg
    2/3 cups peeled chopped apples (used 1 cup of Gala apples)
    1/2 cup of chopped nuts (used Pecans)
    1/4 cup of cinnamon sugar (1/2 tsp of cinnamon to 3 Tbs sugar) (I used 1-1/2 Tbs of sugar to the 1/4 cup of cinnamon and had some left over)

    Melt butter in a saucepan. Remove and add both sugars, egg and vanilla. Mix till smooth. Add dry ingredients. I mixed them up all together first before adding to the batter. Add the apples and nuts and spread into a buttered 8x8" pan. Sprinkle with the cinnamon sugar and bake at 350 fo 30 minutes. (Check after 20 minutes as mine was done in 25 minutes)

    * I found the batter to be a little stiff so I added a couple of Tbs of low fat milk to thin slightly. I also used a spatula to spread the batter evenly into the corners of the dish. Forgot to add the nuts to the batter so just sprinkled them on top. No problem. Very good and used less cinn/sugar topping.

    * Great recipe to use in mini muffin pans. Use paper liners.
