    Posters Comments: At first I wasn't sure if I wanted to try this recipe. I have a tried and true one that I always use but I thought I would give it a try. I didn't add any coconut. My family doesn't like it and I didn't add any food coloring. I wanted a bold lemon taste so I added 3 Tbl to the batter instead of the one. It turned out so good and it was easy like all Bisquick recipes are. This is a keeper for my family.

    List of Ingredients

    1 cup Bisquick baking mix
    2 Tbsp. powdered sugar
    2 Tbsp. firm butter or margarine
    3/4 cup sugar
    1/3 cup flaked coconut * (see above comments)
    1 Tbsp. fresh lemon juice * (see above comments)
    2 tsp. grated lemon rind
    1 drop yellow food coloring

    Glaze:
    1/2 cup lemon juice
    1 lb. box powdered sugar

    Recipe

    Mix the 1 cup of Bisquick and powdered sugar; cut in the margarine. Press into an ungreased 8-in. square pan.

    Bake in a preheated 350ºF oven for 10 minutes until light brown.

    Mix all remaining ingredients and pour over slightly cooled baked layer. Return to oven and bake another 25 minutes more until set.

    Loosen edges while warm. Cool completely and spread with the glaze (beat together until smooth).
