    Peanut Butter Bliss Bars

    1/2 cup (1 stick) unsalted butter, at room temperature
    1/2 cup granulated sugar
    1/2 cup packed brown sugar
    1/2 cup creamy peanut butter
    1 egg
    1 teaspoon vanilla extract
    1 cup all-purpose flour
    3/4 cup quick-cooking oats
    1 teaspoon baking soda
    1/4 teaspoon salt
    1 cup (6 ounces) semisweet chocolate chips

    Icing
    1 cup confectioners sugar
    4 tablespoons creamy peanut butter
    4 tablespoons milk

    Recipe



    Heat oven to 350ºF. Grease a 13- by 9-inch baking dish and set aside.

    In a mixing bowl, cream butter, both sugars and peanut butter. Add egg and vanilla; mix well. In a separate bowl, combine flour, oats, baking soda and salt; stir into creamed mixture. Spread into prepared pan (the easiest way to do this is with an offset spatula, if you have one).

    Bake for 20-25 minutes or until lightly browned. Remove from oven and immediately sprinkle with chocolate chips. Allow pan with chips on to set for 5 minutes, and then spread the now-melted chips evenly over the bars. (Chips will soften from the heat of the bars.)

    Combine icing ingredients; spoon over bars and swirl to create a marbled effect with the chocolate (again, use the offset spatula). Cool completely before cutting.
    Makes 3-4 dozen.
