    1 cup shortening (Crisco is great - the sticks are handy but I also sometimes use unsalted butter)
    2 cups sugar
    3 eggs (for rolled); 2 eggs for drop
    3 1/2 cups flour (rolled); 3 cups for drop - I use plain unbleached flour
    4 tsp. baking powder
    1 tsp. salt
    1 tsp. pure vanilla - can also use almond or lemon

    Cream shortening and sugar till fluffy. Add eggs and beat well. Sift dry ingredients and add slowly. Add flavoring.

    For rolled cookies, chill several hours. It stores well in a plastic bag. Then roll on powdered/gran.sugar floured surface.

    You do not have to chill dough first, if you are making drop cookies.

    Bake on greased (or parchment paper lined) cookie sheet 8 to 10 min. in preheated 375 oven. Don't overbake. Cookies need to be SLIGHTLY brown, only on edges.

    These cookies are very good un-iced, but are great iced too. The kids have so much fun icing them and actually they make a great party activity if you make the cookies ahead of time.

    I have even given the chilled dough (it freezes well, too) as gifts at Christmas time to families with cookie cutters, the recipe, etc. That is a great gift for busy families.
