1/2 c. firmly packed brown sugar
1 c. shortening
3 large eggs, separated
1/4 c. water
1 1/2 tsp. vanilla
1/4 tsp. salt
2 c. flour
2 c. finely chopped pecans
1 c. jam or preserves of your choiceRecipe
Heat oven to 350º. Spray 2 cookie sheets with no-stick spray.
Beat brown sugar and shortening with mixer at med. speed for 2 min. or 'til fluffy. Scrape down sides of bowl. Add egg yolks, water, vanilla and salt; beat 'til well combined. Add flour on low speed 'til well blended.
Beat egg whites in shallow bowl 'til foamy. Place pecans in a seperate bowl. Divide dough into 48 equal portions. Form into balls. Dip each ball into egg whites, then roll in the pecans and place on prepared cookie sheets. Using back of teaspoon or your thumb, make a rounded indentation in top of each cookie.
Bake cookies for 10 min; remove from oven. It may be necessary to press the indentation once again. Fill each cookie with a scant tsp. of jam or preserves. Return cookies to oven; bake another 5-7 min or 'til lightly browned on bottom. Remove from oven; allow cookies to cook on baking sheet.
Makes 4 dozen cookies
