WHITE CHOCOLATE MACADAMIA MONSTERS

Makes: 14 - 4 1/2" OR 40 - 3" cookies
List of Ingredients
Position a rack in the center of the oven. Preheat the oven to 325°F. Grease cookie sheets or cover with parchment paper or greased aluminum foil.
Beat on medium speed until very fluffy and well blended:
2 1/2 sticks unsalted butter, softened
1 1/3 c sugar
2/3 c packed dark brown sugar
Beat in 1 at a time:
2 large eggs
Stir in:
1/2 t vanilla
Stir in just until combined:
2 1/2 c all-purpose flour
1 t baking soda
1/8 teaspoon salt
Stir in:
1 c macadamia nuts
1 c chopped white chocolateRecipe
Using 1/3 cup for each monster, drop the dough onto the sheets, spacing about 3 inches apart. Bake, one sheet at a time, until the cookies are golden brown, 20 to 25 minutes.
For regular-sized cookies, drop by heaping measuring teaspoonfuls 1-1/2 inches apart and bake for 15 to 17 minutes.
Remove the sheet to a rack and let stand until the cookies firm slightly. Transfer the cookies to racks to cool.
