    Ann's Creamy Shrimp with Corn and Bacon

    8 slices bacon
    1 tablespoon olive oil
    1 medium onion, chopped
    2 cloves garlic, minced
    1/2 cup dry white wine
    3/4 cup heavy cream (or stir together 1 cup low-fat milk with 1/4 cup flour)
    1 pound (26-30) shrimp, peeled and deveined
    1 (10 ounce) package frozen corn, thawed
    Salt and pepper, to taste
    Dehydrated chives, for garnish (optional)
    Hot cooked rice

    Cook the bacon in a large skillet over medium-high heat until crisp. Transfer to a paper towel, let cool, break into pieces, and reserve. Pour out grease, but leave a coating in the pan. Add the oil and heat over medium-high heat. Add the onion and cook, stirring occasionally, until softened. Add the garlic and cook until fragrant. Add the wine and cream (or milk mixture). Bring to a high simmer and cook, stirring until slightly thickened. Stir in the shrimp and corn. Simmer until shrimp are cooked through, stirring occasionally. Adjust seasonings. Stir in the bacon. Serve over rice and garnish with chives.
