Doreen's Chicken Fricassee

List of Ingredients
1 chicken, cut up (I used legs and thighs)
1/4 cup flour
1 teasp dried thyme
1/2 teasp each salt and pepper
1 onion chopped or sliced
1/2 cup celery, chopped
2 cloves (or more, I used 3) garlic
1 cup water
1 bay leaf
1 cup milk
1/4 cup chopped parsley
Recipe
Mix in ziplock bag: flour, thyme, salt & pepper.
Shake chicken pieces one at a time and coat.
In dutch oven, brown chicken in 2 Tab olive oil & 2 tab butter. Remove from pan.
In same oil, add onions, celery & garlic. Cook until semi soft. Add chicken, water and bay leaf. Bring to boil and cover and simmer 35 minutes or until juice runs clear.
Mix milk with leftover seasoned flour and add to pot. Stir to thicken. Garnish with chopped parsley.
Serve with mashed potatoes or noodles.
Mark could not get enough of this. Good comfort food.
