    Grace's Greek Lemon Potatoes

    8 Medium Potatoes
    3 Tbsp Lemon Juice
    2 Tbsp Butter (melted)
    2 Tbsp Olive or Vegetable Oil
    1 1/2 tsp Oregano, Dried
    Salt & Pepper to taste
    2/3 cup hot water

    Recipe



    Quarter and rinse potatoes and place in large bowl. Drizzle with next 3 ingredients. Toss until coated. Sprinkle with next 3 ingredients. Toss well.

    Pour hot water into roasting pan. Add potatoes but do not stir.

    Bake, uncovered in 400°F oven for 45-60 minutes, shaking pan and adding more hot water if necessary to prevent sticking, until tender and golden. Serves 8.

    1 serving: 147 calories; 6.5 g total fat (4.4 g mono, .6 g poly, 1.1 g sat); 0 mg cholesterol; 21 g carbs; 2 g fibre; 2 g protein; 486 mg sodium.

    My notes: I don't peel the potatoes; add whole, peeled garlic cloves to the roaster halfway through cooking, or sprinkle the potatoes with parsley flakes, rosemary and/or thyme when mixing with lemon juice and olive oil, grate some lemon peel into the olive oil mixture.
