    Penny's Fudge

    List of Ingredients

    3 cups sugar
    3/4 cup margarine
    2/3 cup (5-1/3 oz. can) evaporated milk
    6 oz. pkg. semi-sweet choc. chips
    7 oz. jar marshmallow creme
    1 teas. vanilla

    Recipe

    Combine sugar, margarine & evaporated milk in heavy 1 1/2 qt. saucepan; bring to a full rolling boil, stirring constantly. Continue boiling for 5 min. over medium heat, stirring constantly to prevent scorching. Remove from heat; stir in choc. pieces until melted. Add marshmallow creme & vanilla' stir until well blended. Pour into plastic wapped lined 9x13 pan sprayed with Pam, let cool over night, cut in squares, can be frozen.

    To make peanut butter, omit the choc. chips & vanilla but add 1 cup of peanut butter in lieu of the choc chips. Makes 3 lb.

    Now the freezing & thawing is no big deal. Just cut it in squares, wrap in plastic wrap & pop in a big plastic bag, last forever. No thawing necessary, I have been known to pop a piece in my mouth while still frozen, put it on the goodie trays at Christmas, by the time we deliver it's all thawed........nothing to it.

    The cup of peanut butter is plain ole PB, not the chips, you can use crunchy or the smooth, I have used both, easy to make.
