Zora's Shrimp and Grits

GRITS
1 cup quick cooking grits
4 tablespoons unsalted butter
3/4 cup shredded extra-sharp white Cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon cayenne pepper
1 1/2 teaspoons paprika
Salt and pepper
SHRIMP
1 pound bacon, cooked and chopped
3 tablespoons olive oil
1 1/2 pounds shrimp
Salt and pepper
3 teaspoons garlic, minced
3 cups mushrooms, sliced
3 tablespoons white wine
2 tablespoons lemon juice
1 cup chopped shallots
Recipe
For the grits, cook grits according to instructions on package. As grits are finishing, whisk in butter, Cheddar, Parmesan, cayenne and paprika, then season with salt and pepper. Keep warm until shrimp are ready.
For the shrimp, cook bacon until it begins to brown. Remove from heat, strain and reserve bacon grease. Chop bacon and set aside.
Heat a large skillet until very hot and add olive oil and 2 tablespoons bacon grease. As the oil begins to smoke, toss in shrimp to cover bottom of pan. Before stirring, season with salt and pepper. Stir until shrimp begin to turn pink all over (let pan return to original hot temperature). Stir in garlic and chopped bacon, being careful not to burn garlic. Toss in mushrooms and coat with oil briefly. Add wine and lemon juice; stir for 30 seconds or until everything is well-coated. Just before serving, toss in shallots and cook for about 30 seconds. Serve shrimp mixture over grits.
