Tam's Asian Coleslaw

1 head grn cabbage -- shredded
1/2 head red -- shredded
2 shredded carrots
4 scallions -- julienned
1 c bean sprouts (fresh only)
Dressing:
1/2 c rice wine vinegar
1/4 c soy sauce
1 Tbsp salt
2 Tbsp sesame oil
1 tsp grated ginger
1/2 tsp chili paste (start with 1/4 tsp)
3 Tbsp creamy peanut butter
salt/pepper (just a little)

Put cabbage in colander & sprinkle salt on top. Let stand in sink 15 minutes to draw out water for crispness. Rinse & drain well before using.
Whisk together vinegar, soy, chili, peanut butter & scallions; season with salt & pepper. Add cabbage to large bowl & pour over dressing, tossing well. Taste & add more salt & pepper if needed. Sprinkle top with sesame seeds before serving.
