    Tam's BEST BEEF STEW

    2 lbs cubed chuck roast
    4 Tbsp bacon grease (divided, used as needed)
    1 lg onion, cut in bite size
    3-4 cloves chopped garlic
    1/4 c flour
    1 medium can (min. of 15 oz) tomato sauce
    2 cans beef broth (+ more if needed)
    2 bay leaves
    12 - 15 small whole boiling onions
    1/2 lb small whole mushrooms
    1 1/2 cans beef consomme
    1 c Burgundy wine (do NOT use a cheap wine!)
    2 tsp parsley
    1/2 tsp thyme
    4 strips lemon rind
    2 c each of celery, potatoes & carrots, in bite size

    Recipe



    1) Dip meat in flour, a few at a time, & set aside on wax paper. Let set 10 mins or so. Add 2 Tbsp bacon grease to Dutch oven or large heavy duty pot heated on med/high & add a small batch of meat. Brown well. Remove, add little more bacon grease, & repeat until all are browned, removing after each batch until finished. Remove meat & set aside for now.
    2) Add onion pieces & saute until golden Turn to med/low & add garlic. Saute 1-2 mins. Sprinkle with flour & cook 2-3 mins., stirring constantly (add little oil if needed). Add tom. sauce, broth, 1 c of consomme, lemon rind & seasonings. Cover & simmer on low to med/low 30 mins. then add meat & boiling onions; simmer slow for 1-1 1/2 hrs then remove bay leaves & lemon strips.
    3) Meanwhile, put carrots in 2-3 qt. Microwave container, cover & cook 2 mins. Add potatoes & celery. Cook 2 mins. or until all veg’s are slightly crisp; add to stew pot along with mushrooms, wine & consomme; continue to simmer 30 - 45 mins. If it gets too thick, add little more beef broth.
