Tam's RAISIN BRAN MUFFINS

8 oz (4 cups) Raisin Bran
1/2 cup raisins
1 cup + 2 Tbsp sugar
2 1/2 cups flour
2 1/2 tsp baking soda
1/2 cup + 1 Tbsp margarine
2 1/2 cups buttermilk*
4 egg whites (no yolks used)
Recipe
*can substitute buttermilk by adding 2 tsp vinegar to whole milk.
Melt margarine. Beat egg whites until frothy; dust raisins in little flour. Use a large bowl & combine all ingredients (batter will be thin but thickens when refrigerated).
Preheat oven to 350ºF. Spray muffin tins & fill each 1/2 full. Bake for 12-15 mins (but check at 10 mins.....it seems to vary).
This batter will save for up to 6 weeks refrigerated so if you want to double it, just use a SUPER size bowl to mix it in!
