    Tam's Thai Shredded Pork w/Lime Sauce

    List of Ingredients

    1 1/4 lbs pork tenderloin, into very thin strips
    2 Tbsp olive oil
    1 1/2 cup chp’d onions
    1 piece bacon, chp’d
    1/2 cup white wine
    2 Tbsp jalapeno seeded & chp’d fine
    1 1/2 cup chicken broth
    3/4 - 1 cup whipping cream
    1/4 cup lime juice
    2 lg tomatoes, diced & seeded
    1 cup chp’d scallions

    Recipe

    Sprinkle pork with salt & pepper. Use lg heavy duty new teflon skillet . Heat oil on med/high. Add pork strips & saute until almost done, about 2-4 mins.. Transfer to plate. Add onions, bacon & jalapeno; saute, browning slightly, about 2-3 mins. Add broth, wine & cream; simmer until reduced to 1 1/2 cups, about 7 mins. Return pork to skillet. Stir in lime juice. Add tomatoes & saute few mins. longer. Serve with chp’d scallions sprinkled on top. (Can serve over rice if preferred, making certain there is enough sauce.) Serves 4
