Here is Tippy's refrigerator pickle recipe that I made last year and will do so again very soon. Delicious!
Refrigerator Dill Pickles
Whole Recipe {Half Recipe} [Extra Brine]
25 medium pickling cucumbers {12}
1 bunch fresh dill {½}
2 large onions, thinly sliced {1}
5 garlic cloves, sliced {3}
Cut each cucumber into 1/2–inch rounds. In a large glass bowl, combine the cucumbers, dill, onions, and garlic. Set aside.
In a large sauce pan, combine 1 quart each water and white vinegar {2 cups} [1 cup]
¾ cup sugar {3 oz.} [1 ½]
½ cup canning salt {2 oz.}[1 oz.]
1 tablespoon pickling spice {½}
2 tablespoons savory pepper {1}
Bring to a boil; cook and stir just until salt is dissolved. Pour over cucumber mixture; cool. If necessary, because of the size of the storage container, make another [small batch] of brine omitting pickling spice and pepper.
Place in large plastic container and refrigerate for at least 24 hours. Store them in the refrigerator for up to 2 months.
Extra brine may be used to pickle beets.
