1 cup firmly packed dark brown sugar
1/2 cup granulated garlic
1/2 cup kosher salt*
1/2 cup paprika
2 TB. granulated onion
1 TB dry mustard
1 TB Creole seasoning
1 TB chili powder
1 TB ground red pepper
1 TB ground cumin
1 TB Ground black pepperRecipe
Stir it all together in a bowl and store in an airtight container.
Yields about 3 cups.
A must to keep on hand.
To use it on ribs I rub both sides of the ribs with the 'Rub' and lay on baking rack in a large cooking pan with sides. Pour water in bottom of the pan, not touching the meat. Cover the pan with foil and bake at 300 degrees for 2 1/2 hours. Note; that's what it takes for a good sized rack of baby back ribs. If you are doing chicken or cheaper cuts of pork rib it varies in time.
Remove the meat from the pan when they are done. Finish off on the grill and use whatever BBQ sauce you desire on them, grilling both sides.
Be very careful when removing the pan with hot water in it from the oven and let is sit a litte before removing the foil. It's HOT! Speaking from experience.
*I have cut down on the salt amount for us.
