    List of Ingredients




    1/4 cup onion, chopped
    2 cloves garlic, minced
    1/4 cup lemon juice
    2 tablespoons soy sauce
    1 tablespoon honey
    2 teaspoons ground ginger
    1 boneless skinless chicken breast half, cut in strips
    1/2 cup chicken broth
    1/2 cup instant rice, uncooked
    1 tablespoon fresh parsley, chopped
    1/2 teaspoon orange peel, grated

    Recipe



    In a small bowl, combine onion, garlic, lemon juice, soy sauce, honey and ginger. Add chicken; cover and refrigerate for at least 1 hour.

    In a small saucepan, bring chicken broth to a boil. Remove from the heat; stir in rice, parsley and orange peel. Cover and let stand for 5 minutes.

    Meanwhile, cook the chicken and marinade in a hot skillet until no longer pink. Serve over rice.

    Yield: 1 serving.
