    Spaghetti With Eggplant-Mushroom Sauce

    1/4 lb. fresh mushrooms, sliced
    1 small onion, finely diced
    1 small eggplant, peeled & diced
    1 (8 oz) can tomato sauce
    1/4 tsp. dried oregano
    1/4 tsp. dried basil
    4 oz spaghetti noodles
    1 1/2 quarts boiling water

    Recipe



    Put mushrooms, onion and eggplant in large nonstick frying pan. Add tomato sauce and spices. Cover and simmer for 15 minutes or until vegetables are soft. Meanwhile, gradually add spaghetti to boiling water. Cook uncovered until tender, drain pasta and mix with vegetables sauce.

    Makes 2 servings.
