    1 pound dried white beans, sorted and rinsed
    1 meaty ham bone, or 2 cups diced cooked ham
    1 onion, finally chopped
    2 Tbsp. finely chopped parsley
    1 tsp. salt
    1/4 tsp. pepper
    1 bay leaf
    7 cups water

    Recipe



    In a large pan, heat the beans in water to cover. Boil gently for 2 minutes; turn off heat and let stand for 1 hour (beans can be soaked overnight if time permits).

    Drain, put into a slow cooker. Add the remaining ingredients. Cover and cook on low for 12 to 14 hours or until beans are very soft. Remove ham bone, if using, and bay leaf. Cut meat off bone and return meat to beans. Mash or puree some of the beans to thicken soup. Serve hot.

    Note: For a variation, add 2 tbsp. tomato paste.
