French Onion Beef Casserole

1 1/4 pound boneless beef round steak (1/2-3/4 inch thick) **I used beef stew meat**
1 (8 oz) pkg sliced fresh mushrooms **I used portabellas**
1 large onion, sliced, separated into rings **I chopped into thin slivers**
1 can condensed French onion soup
1 (6 oz) pkg herb stuffing mix **Store didn't have, so I used cornbread stuffing**
1/4 cup margarine or butter, melted
4 oz (1 cup) shredded mozzarella cheeseRecipe
Cut beef into 6 serving size pieces-(I usually buy 2 pounds of cubed beef stew meat). Layer half each of beef, mushrooms and onions in 3 1/2 to 4-quart slow cooker; repeat layers. Pour soup over ingredients in slow cooker. Cover and cook on low setting for 8 to 10 hours or until beef is tender and no longer pink.
Before serving, in medium bowl, combine stuffing mix, contents of seasoning packet, melted margarine and 1/2 cup of liquid from slow cooker; toss to mix. Place stuffing on top of contents in slow cooker. Increase heat to high setting. Cover; cook an additional 10 minutes or until stuffing is fluffy. Sprinkle with cheese (I usually double the amount to 2 cups). Cover and cook until cheese is melted.
Serves 6.
Review posted by: RachAel_IN: Holy mackerel!! I'm stuffed! One helping did it, but did I stop? NOOOO!! Round 2, and it put me in the "I have dunlap syndrome". It was a wee bit salty, IMO. But, if you can get past that, this is just awesome! Could've left the beef out, but DH wouldn't have touched it. How'd I ever miss this recipe? If you did, here's your chance to grab it, try it, and stuff yourself silly, too;) My changes are in **.
